The Blessing of Hot Water

Okay…yes…this is about Thanksgiving. Yes, I’m a little behind. I will admit that. My site host was having some issues and was down most of Wednesday. By the time evening rolled around, I was busy toasting things (see below) and cranking out desserts. And then it was the actual holiday and then it was the holiday weekend…so, yes, this post is slightly late, but the feelings are still valid, so I’m going with it.

Around 7 a.m. on Thanksgiving Eve, My Marine announced, “We have a situation.” Our water heater was leaking and before I even had a chance to say yikes, he continued. “The plumber will be here between 11 and 1 and we’re getting a larger water heater.” (We have 3 teenagers so…Yay!) As a bonus, I didn’t have to do a thing except hang out while the work was being done. Of course, if you read between the lines, there are a lot more blessings in there than just hot water.

My lovely sister, Gayle, hosted Thanksgiving. It was only her second time hosting and she did a fantastic job. The turkey was so good that even though I had decided I was “over” turkey, I’m now going to give it another chance. I contributed by bringing my signature salad.

“Salad?” you say, rolling your eyes. “Who wastes valuable Thanksgiving real estate (plate space) on salad? You must be joking.”

Oh, but I’m not. The highlights of my salad are toasted almonds and toasted sesame seeds. It’s the toasting that brings out the flavor, my friends. And it’s topped off with a homemade citrus dressing. I use 4 heads of lettuce and every last bit of it is gone every year. Granted, I don’t think it’s ever caused someone to change their stance on salads the way my sister’s turkey turned me around, but it’s still good stuff.

I also made pineapple upside down cupcakes and as a bonus, my 16 year old daughter likes to experiment with desserts and made these two lovelies to bring along.

I hope everyone enjoyed the holiday with friends and family. I hope that you had hot water and delicious turkey and Thanksgiving-worthy salad. I hope you remember all your blessings and also do your best to be a blessing, too.
